To make marinade stir together wine, onion, lemon juice, worcestershire sauce, and rosemary, marjoram, garlic salt and ¼ cup of water
Place meat into a plastic large ziplock bag in a shallow dish - add meat and marinade to the bag and seal it. Let is sit and marinate for 6-24 hours turning it occasionally
Drain meat, discard the marinade. Place meat fat side up in a roasting pan. Roast at 325 degrees until desired doneness.
Use an instant read thermometer to check the internal temperature of meat.
Insert the thermometer into the center without touching a bone. Roast at 325 degrees.
Internal temp: Rare: 140 degrees for 1 ¾ - 3 hours Med - 160 degrees for 2 ¼- 3 ¼ hours Well - 170 degrees for 2 ¾ hours - 4 ¼ hours
Once cooked, transfer to a cutting board, cover with foil and let it sit or 15 minutes before carving.
