Molten Chocolate Cakes

Ingredients

  • 1/4 lb. unsalted butter (1 stick)
  • 2T flour
  • 6 oz. semi-sweet or bittersweet chocolate
  • 2T cold heavy cream
  • 2T powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 c. sugar
  • 1 t. vanilla pinch of salt

Steps

In a double boiler, melt butter, chocolate, heavy cream & powdered sugar, stirring until smooth. remove from heat.

In a bowl, whisk eggs, yolks, sugar, vanilla & salt until thick ribbons form (about 3 minutes.)

Sift 2T flour into egg mixture and fold together. Fold chocolate mixture into egg mixture.

Butter & flour 6 oz. ramekins & bake at 450 degrees until sides are set and tops are puffed, about 12 minutes.

Remove from the oven and let cool for 2 minutes.
