Put the bacon in oven for 15 minutes. At the 15 minute mark sprinkle 3 table spoons of brown sugar onto the bacon and roast for 5 minutes more or until bacon is crisp. Once the bacon has cooled crumble into small pieces.
Trim and quarter the brussel sprouts. Finely dice 2-3 garlic cloves and place them in the bowl with the brussels. Add 2-3 tablespoons of garlic flavored olive oil and toss until the sprouts are lightly coated in oil. While tossing, add a generous amount of salt and pepper and a light sprinkling of brown sugar. Toss it all together then place it on a baking sheet covered in parchment paper.
To cook the sprouts, place them on a sheet pan and put in oven at 400 degrees. Allow sprouts to roast for 15-20 minutes and check to see if they are slightly charred and soft in the middle. Once they achieve this level of doneness, sprinkle the prepared bacon all over the sprouts. Next, return the brussels to the oven, cook for 10-15 minutes more.
This dish is done when the sprouts look charred, but still bright green and soft, and the bacon is finished, but not burned. Enjoy!
