Bake 4 whole orange fleshed sweet potatoes in a 425 degree oven until soft when squeezed - for approximately 45 minutes.
When cool enough to handle, scoop the flesh out into a bowl and discard the skins. Add 6 tablespoons of room temperature butter, 1/2 a cup of orange juice time until desired consistency (up to 1.5 cups of orange juice). Add 2 teaspoons of cinnamon. Add salt, pepper to taste, and finally finish with about 1/2 cup of heavy cream. Use an electric beater or hand masher to combine all ingredients and to achieve a nice soft consistency.
Place in a greased baking dish and top potatoes with pads/ pieces of butter (3 tablespoons). Then, lightly drizzle with honey, and a sprinkle of cinnamon. Always taste tests to make sure your seasonings are correct!
Place in a 350 degree oven for 20-30 minutes to heat and serve.
OPTIONAL: you can also top the sweet potatoes with walnuts, pecans, bacon bits, or any other topping you think is good, before baking. OPTIONAL: for more orange flavor add the zest of one orange to the mixture.
